Hi friends. Since I am now on sweet trail let me share with you a very simple but delicious sweet. It is called Phirni. I first got acquainted to this sweet when I first went to eat at Karim’s . It is a famous eatery just opposite to Jama Mashjid in old Delhi. Usually they are served in small earthen bowl and hence it gets an unique earthly taste . So you can also serve in earthen bowl but it doesn’t diminishes its appeal if served in glass bowl.
Ingredients:-
Basmati rice 1/2 cup soaked for half an hour
Milk 3 cup
Sugar -1 cup
Kesar -1 pinch
Keora essence -2 drop
Dry fruits ( pista and kismish)
Procedure:-
Take the soaked rice and grind it with 4 tbsp of milk. Then take a pan and put the milk and rice mixture. In medium heat let the milk come to boil while stirring the mixture continuously. When the rice granule gets cooked you add sugar . Add the dry fruits and kesar also. When the mixture thickens slightly remove it from heat . Add the keora water and let it cool . If you want to serve in earthen bowl then distribute them in it and let it cool in the bowl. Keep it in fridge and take out before serving.
