Russian Blini or Pancakes

Pancakes are universal favourite dish for breakfast . It is liked by both kids and adults. But it has different versions in different countries. In Russia or in other countries which was earlier part of Soviet Union, pancakes are called Blini which is similar to French crepes. They can be eaten as such with honey or jam or it could  be rolled with stuffings. The  stuffing can be made of  vegetables , chicken , mushrooms , or cottage cheese. Today I will share with you the recipe of blini stuffed with cottage cheese.
             




Ingredients for fillings:-

150 gms - cottage cheese
2 tablespoon castor sugar
1/2 teaspoon cinnamon powder

Ingredients for blini :-

1/2 cup plain flour
1 egg
1 and 1/2 cup milk
1 teaspoon sugar
1 /2 teaspoon vanilla essence
1/2 teaspoon baking soda
A pinch of salt
Oil for brushing the pan

Procedure :-

First you have to make the filling. Smash the cottage cheese finely and add the sugar and cinnamon powder with it. Then make medium 2" long small cylinder shaped  fillings. Keep them aside.
Now make the batter for the blini. First take the flour in a mixing bowl. Add the salt and baking soda to it . Mix it thoroughly with an egg beater. Then add the egg and gradually start adding milk. You  should keep on mixing till the batter is smooth and thin. There should not be any lumps. Now add the sugar and vanilla essence to it. Now take a non- stick frying pan and put it in medium flame . Brush a bit of oil on it and pour one big ladle of batter on the other edge of the handle of the frying pan . Then take the frying pan in one hand and dip it towards the right and then towards the left making  a slight  circle with your wrist and you will get a big round shaped blini. Now place the filling on one edge and fold it once horizontally. Then fold the right and left edge one by one . Then start folding  horizontally  till the end. Press it gently with your spatula , turn it over and then remove it from the pan. Reapeat this method with the next pancake and you will get a batch of cheese filled blini wraps ready .



  
                 
   



This is the sweeter version of blini wrap. If you don't like to put any fillings you can eat it as it is with honey or maple syrup and banana slices. It is totally up to you how you want to eat.

Chicken Bharta

 Hello friends Chicken being my favourite food I always end up making dishes which include chicken. I try to cook it in different styles and ways. Today I will share with you a dish which is very common in North India but very easy to cook .
