Hello my friends today I will share with you a mouth watering meat recipe . It is called Mutton Rogan Josh .One of the unique thing about this recipe is that you don't use onion garlic or tomato in this recipe. You only use spices and trust my friend the aroma is exotic and the taste is heavenly. It is in fact belong to the region which we called heaven in earth in India ie Kashmir. Most of the dishes in this region are heavy on spices as these are abundantly found here. So now let's not waste much time and dive into the recipe.
Before I start with the ingredients let me tell you that since this dish is spice based there are lots of spices. I have divided it into two different forms - the whole spices and the powder spices. Again within the whole spices there are few which are grinded to form Rogan masala. So let start with the powder spices.
Ingredients ( powder spices) :-
2 tbsp - ginger powder
3 tbsp - fennel seed ( sounf) powder
1 tbsp - asafoetida ( hing) powder
4 tbsp - Kashmiri chilli powder
Mix all these ingredients with 2 cup of water and keep it aside.
Ingredients ( whole spices) :-
3-4 medium size cinnamon sticks
3-4 jayitri ( mace) flakes
4 -5 green cardamom
5 - black cardamom
1 tbsp of black peppercorns
2 tbsp - cumin seeds
1 tsp of saffron strands
Now except the black cardamom , black peppercorns and saffron make a powder of the rest of the ingredients. This would form your Rogan Masala .
Now let's discuss about the rest of the ingredients of this dish.
Ingredients :-
Mutton - 1 kg cut into medium size . Take care that the pieces contain thick bones.
Salt - 2 tbsp
Ghee - 4 tbsp
Mutton fat - 50 gms
Water as required to cook the meat
Procedure:-
First heat the ghee in a pan and then fry the mutton pieces one by one . Fry it so that every piece has a light brown tinge on its outer skin. After frying the pieces you add the mutton fat into the ghee. Let it melt and add the black cardamom and pepper into it . Add the fried mutton pieces . Stir it for a minute and then add the Masala powder and the water mixture . Blend it properly with the mutton and then start adding warm water to it. All the mutton pieces should be well covered . The amount of the water should be such that one cup should remain extra above the mutton level . Add the saffron to it Add salt and then cover it with a lid and cook it in a low flame . After 40 mins add the rogan Masala to it. Again cover it and cook it till the mutton is soft and totally done . You will see that the curry is red in colour . Let it wait for half an hr and the colour becomes darker .
