Vegetable Spring Roll


Hello friends I am back with a new recipe. It is a very common dish liked by all as starters or tea snacks. I am sharing with you the vegetable version for the benefit of my vegetarian friends . For the non veg version the procedure is same but only you have to add shredded chicken or lamb in the fillings .
               
                     

Before I start the recipe I just want to add here that for making the spring roll one must need spring roll wrappers which might be available readymade in the market or you might make it at home. I will share with you the procedure of making the wrappers at home . To make it you will need:-


Ingredients for wrappers:-
3/4 cup plain flour ( approx 140gm)
1/4 cup cornflour
2 tablespoon oil
1 teaspoon salt
Water

Procedure:-
 Mix all the above ingredients to make a tight dough and keep aside for 10 mins. After that divide the dough into small 18 balls. Take one ball roll it into 2" diameter circle , brush oil over it and sprinkle loose flour and cover it with another rolled out circle of the same size . Then with help of loose flour roll out the joined circle into a 4" diameter big circle . Then carefully detach  the two  joined
circle from each other. Lightly now toast the wrappers on both side on a warm frying pan . Don't over toast it or it might become crispy and you would be unable to fold it. Keep the wrapper aside and let it cool.
             


  



             

 Now let us make the fillings of the spring roll. For the fillings you will need the following
Ingredients:-

Shredded cabbage
Shredded carrot
One medium size onion cut into slices
One large capsicum cut into thin slices
4 garlic pieces cut into small pieces
1 teaspoon ginger paste
1 tablespoon soya sauce
2 tablespoon vinegar
1 teaspoon black pepper powder
Sugar and salt according to your taste
3 tablespoon oil

Procedure:-

Take a fry pan and pour  the oil. When the oil is warm add the garlic and onion pieces. Fry it for sometime and then add the capsicum. When the capsicum becomes a bit soft add rest of the vegetables and the ginger paste. Add salt and pepper and cover it for sometime. When water is dried out totally add the vinegar , soyasauce and a bit sugar . Toss it for a minute and then remove it from heat. Let it cool down.
    Now comes the important steps  of folding the spring rolls. But first make a edible gum by mixing one tablespoon of maida with 2 tablespoon of water. One would require this to attach the edge of the wrappers. Take a wrapper and place it on a board . Take a spoonful of your fillings and place it
horizontally in a column . Then take your right and left edge and fold it from both side. Now take the edge facing toward you and roll it upward and attach it with the upper edge with the gum. Now your spring roll is ready.




 


     



 


     
  
Your spring rolls are ready . You have to just deep fry it in oil and serve it hot with hot chilli sauce. Or you may make it in advance  and keep it in fridge  and fry it when your guest have arrived.

Chicken Bharta

 Hello friends Chicken being my favourite food I always end up making dishes which include chicken. I try to cook it in different styles and ways. Today I will share with you a dish which is very common in North India but very easy to cook .
