The Lemon Pudding

Hi friends since we are now in the middle of Easter festivities I decided why not we indulge into some sweet things. In summer we identify coolness with anything to do with lemon or mint. Today I will share with you a sweet dish whose main ingredient is lemon. It is called the lemon pudding.

Ingredients:-

One and half cup of milk
4 tablespoon butter
1/3 cup of flour
One cup sugar ( grinded)
4 tablespoon lemon juice
2 tablespoon lemon jest
3 eggs
1 teaspoon vanilla essence.
Pinch of salt

 Procedure:-

First we have to separate the egg yolks from its white portion. Leave the white portion in a separate bowl. Now take another bowl and start mixing the egg yolks with the butter. Here I would tell you that if you melt the butter beforehand this procedure will be easier. Then add the sugar and after that the flour . You should use a hand whipper to blend these things. Now gradually add the milk to the mixture . Along with it pour your lemon juice and add the lemon jest.Add the vanilla essence mix it well. Now take the egg whites and using a mixer whip it until soft peaks comes up. Then add one tablespoon of grinded sugar and whip it again so that you will get glossy stiff peaks. Now mix the earlier mixture to this whipped egg whites . Use a spatula for this process. You should mix it gently. Now pour it into a well buttered baking dish. Now you can either bake it directly for 20 mins in 170 degree Celsius  or you may bake it in a water bath. I have tried both . If you choose a water bath then you have to place your baking dish in a bigger container where you surround the dish with hot water.
Be sure that your baking dish should  be surrounded in one inch deep hot water . In other words your pudding will be baked in hot water and steam. This would help to maintain the softness of your pudding.Cover the dish with foil and place the whole set up in the preheated oven. Bake it for 30 mins in 130 degree Celsius. In both process you have to check whether the knife comes out clean. If yes then your pudding is done if not then you have to bake for another five minutes.

Now your pudding is ready . You can serve it as it is or you may serve  it with ice cream or whipped cream. Or if you can get your hands on fresh berries you can make a sauce out of it and pour it over  your pudding  lavishly just as I have done with raspberry sauce.

Bon Appetite!!!
