Marcher kachori or Fish kachori

Wish you all a happy 73 rd Independence Day. Always feel emotional on this day remembering all the pain and struggle our freedom fighters have gone through to give us a better and a wonderful future.  And being a Bengali we are also emotional when it comes to food ,specially Fish . Fish is regarded as the staple diet of all Bengalis..We try to incorporate fish in every way possible in our food. So today I will share with you a recipe of fish which you could serve in breakfast or as evening snacks. It is called Maacher kachori or Fish Kachori


  

   
The  Ingredients:- 
For the fillings:-
Boneless fish of any kind - 500 gms 
Onion - 1 medium size cut into thin small pieces 
Green chillies - 2 or 3 according to your taste 
Fresh coriander leaves shredded in small pieces
Salt and sugar according to your taste
Oil - 3-4 tbsp
Turmeric powder - 1/2 tsp

For the dough:-

Plain flour or maida :- 300 gms
Oil  - 3-4 tbsp or more if required
Egg - 1
Salt - one pinch


Procedure :-

First we have to make  the filling for the kachori. We have to boil the fish in 3 cups of water with a pinch of turmeric powder and one tablespoon of salt. When the fish gets completely cooked remove it from water and smash it with a fork. Then pour oil in a pan and fry the onion . When the onion becomes light brown add the fish . Add salt and turmeric and fry it for 5-10 mins . Then add the green chilli pieces and shredded coriander . Give it a toss and remove it from gas. Let it cool for some time .
Now let's make the dough . Take the flour , add a pinch of salt and the oil . Here I must say that   although I have told to take 3 - 4 tbsp of oil but the fact is oil should be added in such amount that  when one clasp ones fingers tight the flour would become a tight ball inside your palm . Then add the egg and water to make a smooth dough. The dough should be tight as that of parantha . Cover it with a wet cloth and let it rest for a while.  
After 10 mins divide the dough into small balls . Take a ball, dust it with loose flour and flatten it  with your fingers. Then take a spoon of filling , put it inside the flatten dough and then close it from all side . Then with help of loose flour roll it out into big round shape. Now heat oil in a kadhai .  When heated properly fry the kachori one by one . Serve it hot with dum aloo .

Chicken Bharta

 Hello friends Chicken being my favourite food I always end up making dishes which include chicken. I try to cook it in different styles and ways. Today I will share with you a dish which is very common in North India but very easy to cook .
