Hello friends whenever we think of the month of summer two things come to our mind . One is the scorching heat of the sun and the other is the juicy delicious fruit mango. So in order to soothe your scorched bodies I decided to share with you the recipe of a cool dessert whose main ingredient is mango. It is called mango cheesecake. Usually it is made with cream cheese. But I will share with you an easier method which could be made with easily available ingredients.
Cheesecake are usually made in two ways. One is a no bake process and the other is baking process. In this write up I will share both the process.
No Bake Method : -
Ingredients:-
100gms -Plain Marie or digestive biscuits
50 gms - butter
250 gms cottage cheese or Paneer
200 gms plain curd
100 ml cream
150 gms sugar
Pulp of one big juicy mango
2 tbsp of gelatin powder
4 tbsp of water
Procedure:-
This process may be easy but takes time than the other one and so it is better that you start the process two days before the day you have decided to eat or serve it to your family or friends.First of all you have to take a muslin cloth or a thin handkerchief and hung the curd and Paneer together for at least 4-5 hrs . Now take a blender and crush the biscuits Then mix the butter with the crushed biscuits. Take a baking tin. Layer it with a foil so that you could pull out the cake by pulling the edge of the foil. Or else use a baking tin with removable base. Spread
uniformly the buiscuits mixture and lightly press it on the base. Then put the baking tin in the refrigerator for 20 mins. While your base is getting ready you start to make the main ingredient of the cake. First crush the sugar in the blender , then add the mango pulp . Blend it for a minute and then add the cottage cheese and hung curd mixture . When it gets totally blended add the cream. Then
prepare the gelatin. Add the gelatin powder with water . Rest it for a minute and then put it in medium heat stirring it continuously. Automatically it will melt. Remove it from heat and pour it in the blender with the other mixture. Give it a twirl . Take out your baking tin now and gently pour the mixture over it . Cover it with a foil and put it in the top shelf of the refrigerator. Let it set for 12 hrs . After that you can remove it from the tin and place it on a plate. You can garnish it with mango pieces .
Baking Process:-
In this process the ingredients are all same except you don't require gelatin powder but you add two eggs and 2 tablespoon of flour .
The procedure is also same except the last part where you add the gelatin mix . Instead of the gelatin mix you whip the eggs and add it to the mixture with 2 tbsp of flour. Pour it on the baking tin and bake it for 20 mins in 150 degree Celsius. After 20 mins you should check whether it is still liquid or it has solidified like a pudding. If yes then your cake is done or else bake it for another five minutes.
Whichever method you use I must say the end product is fabulous. So indulge in your sweet tooth and make this mangolicious dessert for yourself and your family.
