Pineapple Upside Down Cake

Winter season always meant to me time of holidays and gorging cakes and pudding. Rich plum cake is usually the toast of the season but I will share its recipe later. Today I will share the recipe of upside down pineapple cake which I guarantee you will definitely like it.

Ingredients:-

Pineapple- cut into round pieces ( 3-4 slices depending upon the cake tin) boiled in sugar water.
Pineapple juice - the sugar water in which you boil the pineapple . Just remember you should add only 1 tbsp of sugar to. 2 cup of water.A
Or you can use canned pineapple
2-3 tbsp brown sugar
25gm - butter

200gms- flour
200gms- sugar (grinder)
2 tsp of baking soda
4 - eggs
80ml - white oil
100 ml milk
2 tbsp vinegar
1/2 tsp vanilla essence
150 ml pineapple juice

Procedure:-

First separate the dry ingredients from wet ingredients. Sieve the flour adding the baking powder and a pinch of salt. Add the vinegar to the milk and keep it separately.
Now prepare the baking tin. In this type of cake I would advice you to line the tin with either butter paper or use aluminium foil. Then line your base with butter. Sprinkle brown sugar on it. Now place the round piece of pineapple over it. You may place a cherry in the middle of each pineapple and Leave it aside.
Now make the cake batter. First whip the egg, add the sugar, then the oil, milk and vinegar and pineapple juice. Use a hand mixer to mix these ingredients. Then add the flour and give it two three round  with mixer and do the rest with a spatula. Also add the vanilla essence to it. Your batter is ready and pour it on the pineapple lined baking tray. One may add a few pineapple chunks into it for better flavour.
Put it in a preheated oven and bake it for 40 mins in 170degree . After 40 mins if the fine knife doesn't comes up clean after piercing then bake it for another 5 mins. After it is done cool it on a rack then take  the serving tray and upside your cake over it. Gently remove the butter paper or the foil and Voila! Your cake is ready
